Shredded Brussel Sprout Salad

This salad comes together quickly. Even kids who don’t like cooked brussel sprouts may find this one delicious!

Ingredients:

1 – 1.5 lbs brussel sprouts, shredded (I use a food processor)
1 peeled and chopped apple
1/2 cup dried cranberries
1/2 cup sunflower seeds (walnuts would be awesome but I was out of them)
1/3 cup cheese
3 thinly sliced green onions

Toss all ingredients in a bowl and drizzle on dressing.

Dressing:

1/3 cup white vinegar
2/3 cup olive oil
1 tsp dijon mustard
1/2 tsp sugar
1/2 tsp salt
pepper to taste

Mix ingredients together in a jar and shake until emulsified.

This keeps well in the fridge. I like it better the second day when everything is just a bit wilted, but maybe I’m just weird like that.
