Christmas Cocoa

We have been hitting up the hot cocoa this holiday season more than usual.  I think it has something to do with that new fireplace and the allure of sipping a steaming cup in front of it.  I make my cocoa a little differently than most.   I use a chocolate base and then just stir a tablespoon (or two!) of it into a cup of steaming milk.

To make the chocolate base:

3/4 cup powdered sugar (more or less to taste — my kids like it sweet)

1/3 cup cocoa

Heavy whipping cream

Mix the dry ingredients together and add heavy cream until smooth.  This should be thick and heavy – almost like chocolate truffle base.  I store it in a pint jar in the fridge and scoop out a tablespoon to whisk into hot milk when the mood strikes.

Top with fresh whipped cream and (my new favorite topping!) little peppermint sprinkles.
