I have been obsessed with baking bread lately.  This type of obsession is not new to me as I’ve been an avid bread baker for years.  It’s more the timing of my latest craze.  It’s been 100 degrees outside lately and not the type of weather that beckons one to fire up the ovens.  But, if I’ve learned anything about myself over the years, it’s that I need to do the things I’m yearning to do so I can move on to my next crazy scheme.  One way I devised to feed my frenzy without turning the house into a sauna — English muffins!

They are cooked mainly in a skillet with a short time spent in the oven.  After splitting them with a fork and slathering with butter they are heavenly.

So good that even my husband will stop muttering about the craziness of running an oven in this heat and join me for one.  Outside, of course, where it’s cooler than in my kitchen.
