Homemade Pizzelles

My mother requested homemade pizzelles for her birthday.  I searched high and low for anise extract for authentic ones.  No luck.  So, I improvised.

The recipe I used is:

  • 1 and 3/4 cup flour
  • 3/4 cup sugar
  • 2 tsp baking powder
  • 1/2 cup butter, melted
  • 3 eggs
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • zest of 1 orange

Mix the dry ingredients together.  Beat the eggs & melted butter together, add the extracts and orange zest.  Combine with the dry ingredients and bake in a pizzelle iron.

I have a thing for kitchen gadgets and the pizzelle iron is one of my favorites.  There is nothing else I can make with it but these cookies but I wouldn’t give it up for anything.

I haven’t managed to make perfect ones.  They always need trimming after coming out of the iron.  Perhaps I need more practice?  Or maybe I should just embrace imperfection since my kids clamor around me to nibble the trimmings.  We dug some caramel dip out of the fridge to turn a few into stroopwaffels — a dutch treat!

The rest were packaged up to mail off to my mother.
